Ingredients

  • 2 pieces Chicken thighs, bone‑in, skin‑on
  • 3 tablespoons Soy sauce
  • 2 tablespoons Mirin (sweet rice wine)
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Vegetable oil
  • 1 tablespoon Green onions, sliced (optional garnish)(optional)

Instructions

  1. 1

Pat the chicken thighs dry, then lightly season with a pinch of salt and pepper.

  2. 2

In a small bowl, whisk together soy sauce, mirin, and sugar until the sugar dissolves.

  3. 3

Heat the oil in a skillet over medium‑high heat; add the chicken thighs skin side down and sear for 4‑5 minutes until the skin is golden and crisp.

  4. 4

Flip the chicken, pour the soy‑mirin mixture over it, and reduce heat to medium. Cook for another 6‑7 minutes, basting the chicken with the sauce, until the internal temperature reaches 165 °F (74 °C) and the sauce thickens into a glaze.

  5. 5

Remove the chicken from the pan, let rest 2 minutes, then slice and drizzle any remaining glaze over the pieces. Garnish with sliced green onions if desired.
