Ingredients

  • 140 g dried pasta (penne or rotini)
  • 120 g black beans (canned, drained and rinsed)
  • 100 g corn kernels (canned or frozen)
  • 1 medium avocado
  • 2 tbsp lime juice
  • 120 g plain Greek yogurt
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder(optional)
  • 1/4 tsp salt(optional)
  • 1/8 tsp black pepper(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the pasta until al dente, about 10 minutes, then drain and cool slightly.

  2. 2

While the pasta cooks, whisk the Greek yogurt with smoked paprika, cumin, garlic powder, lime juice, and a pinch of salt and pepper to make a smoky crema-style dressing.

  3. 3

In a bowl, combine the warm pasta, black beans, and corn. Stir to distribute evenly.

  4. 4

Fold in the diced avocado gently. Pour over the crema dressing, toss, and taste for seasoning. Serve warm or chilled.
