Ingredients

  • 1.5 lbs Pork belly, skin removed and cut into 1-inch cubes
  • 1 medium head (about 4 cups) Cauliflower florets
  • 1 cup Heavy cream
  • 1/2 cup Chicken broth
  • 1 medium Yellow onion, thinly sliced
  • 4 cloves Garlic, minced
  • 1 tbsp Fresh rosemary, chopped
  • 1 tbsp Fresh thyme leaves
  • 1 tbsp Dijon mustard(optional)
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/4 cup Parmesan cheese, grated(optional)

Instructions

  1. 1

Prep (20 min): Cut pork belly into 1-inch cubes and pat dry. Slice onion, mince garlic, chop rosemary and thyme, and break cauliflower into bite-sized florets.

  2. 2

Sear (10 min): Heat olive oil in a large oven-safe skillet over medium-high heat. Season pork belly with salt and pepper, then sear on all sides until deeply golden, about 8-10 minutes. Remove and set aside.

  3. 3

Render and sauté (10 min): Reduce heat to medium. Add onion to the rendered pork fat and cook 5 minutes until softened. Stir in garlic, rosemary, and thyme; cook 1 minute until fragrant.

  4. 4

Braise (60 min): Return pork belly to the skillet, add chicken broth, cover, and simmer on low for 45 minutes, stirring occasionally, until pork is tender.

  5. 5

Add cauliflower and cream (20 min): Stir in cauliflower florets, heavy cream, and Dijon mustard. Simmer uncovered on low for 20 minutes until cauliflower is fork-tender and sauce has thickened.

  6. 6

Finish (5 min): Preheat broiler. Sprinkle Parmesan over the skillet and broil 3-5 minutes until golden and bubbling. Rest 5 minutes, season to taste, and serve hot.
