  • 1 1/2 lbs Boneless skinless chicken breasts
  • 2 tablespoons Smoked paprika
  • 1 cup BBQ sauce
  • 24 pieces Frozen mini waffles
  • 2 cups Shredded cabbage mix
  • 3 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt and black pepper

Instructions

    Season the chicken breasts with smoked paprika, garlic powder, salt, and pepper.

    Heat olive oil in a large skillet over medium heat and cook chicken for 6-7 minutes per side until fully cooked.

    While chicken cooks, whisk together apple cider vinegar, honey, and a pinch of salt in a bowl, then toss with cabbage mix to make the slaw.

    Remove chicken from the skillet and use two forks to shred it into bite-sized pieces.

    Return the shredded chicken to the skillet and stir in the BBQ sauce until well coated and warmed through.

    Toast the mini waffles according to package instructions until they are golden and slightly crisp.

    Place a generous spoonful of BBQ chicken onto half of the toasted waffles.

    Top the chicken with a spoonful of the vinegar slaw and place the remaining waffles on top to create sliders.
