Preheat your oven to 400 degrees F (200 degrees C) and grease an 8-inch square baking pan.
In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, salt, and smoked paprika.
In a separate small bowl, combine the milk, beaten egg, melted butter, and the mashed roasted garlic.
Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
Fold in the shredded cheddar cheese if using for extra richness.
Pour the batter into the prepared baking pan and spread it evenly with a spatula.
Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cornbread to cool in the pan for 10 minutes before slicing into squares.
