Ingredients
- 1 pound Fresh okra, sliced into 1/2 inch rounds
- 1 cup Buttermilk
- 1 cup Yellow cornmeal
- 1/2 cup All-purpose flour
- 2 tablespoons Brown sugar
- 1 tablespoon Smoked paprika
- 1 teaspoon Garlic powder
- 1 teaspoon Onion powder
- 1/2 teaspoon Chili powder
- 1 teaspoon Kosher salt
- 1/2 teaspoon Black pepper
- 2 cups Vegetable oil for frying
Instructions
- 1
Place the sliced okra in a medium bowl and pour the buttermilk over it, ensuring every piece is coated; let soak for 15 minutes.
- 2
In a large shallow dish or a gallon-sized zip-top bag, whisk together the cornmeal, flour, brown sugar, smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper.
- 3
Heat the vegetable oil in a large cast-iron skillet or heavy-bottomed pot over medium-high heat until it reaches 350 degrees Fahrenheit.
- 4
Using a slotted spoon, remove a handful of okra from the buttermilk, letting the excess liquid drip off, and transfer to the dry rub mixture.
- 5
Toss the okra thoroughly in the dry rub until each piece is well-crusted and separated.
- 6
Carefully drop the okra into the hot oil in batches to avoid overcrowding the pan, which can lead to sogginess.
- 7
Fry for 3 to 5 minutes, turning occasionally, until the okra is deep golden brown and crispy.
- 8
Remove with a spider strainer and drain on a wire rack over paper towels; serve immediately while hot.
