Ingredients
- 2 pounds Pork baby back ribs
- 2 tablespoons Chipotle peppers in adobo sauce
- 3 tablespoons Brown sugar
- 1 tablespoon Apple cider vinegar
- 1 tablespoon Soy sauce
- 1 teaspoon Garlic powder
- 1 teaspoon Paprika
- 1/2 teaspoon Black pepper
- 1 tablespoon Olive oil
Instructions
- 1
Preheat your smoker to 225°F (107°C). In a small bowl, combine chipotle peppers, brown sugar, apple cider vinegar, soy sauce, garlic powder, paprika, black pepper, and olive oil to form a glaze.
- 2
Pat the ribs dry, remove the membrane, and brush both sides generously with the glaze. Reserve any remaining glaze for basting.
- 3
Place the ribs on the smoker rack, bone side down, and smoke for 2 hours, basting with the reserved glaze every 30 minutes.
- 4
After 2 hours, increase the smoker temperature to 275°F (135°C) and continue smoking for another 1 hour, or until the meat is tender and pulls away easily from the bone.
- 5
Remove the ribs, let rest for 10 minutes, then slice between the bones and serve.
