  • 1 lb Ground Lamb
  • 1 lb Ground Beef (80/20)
  • 0.5 cup Yellow Onion, finely grated and drained
  • 2 tablespoons Garlic, minced
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Dried Marjoram
  • 1 teaspoon Dried Rosemary, crushed
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper
  • 1 tablespoon Olive Oil(optional)

    Place the grated onion in a clean kitchen towel and squeeze out as much liquid as possible to ensure the meat stays firm.

    In a large bowl, combine the lamb, beef, onion, garlic, and all spices; mix by hand for 2-3 minutes until the mixture becomes slightly tacky and paste-like.

    Form the meat mixture into a tight, uniform loaf shape that will fit comfortably inside your slow cooker.

    Place the loaf into the slow cooker, cover, and cook on Low for 4 to 5 hours until the internal temperature reaches 165°F (74°C).

    Carefully remove the meatloaf from the slow cooker and let it rest for at least 15 minutes to firm up.

    Slice the meat as thinly as possible using a sharp knife.

    Optional: For authentic texture, sear the thin slices in a hot skillet with a touch of olive oil for 1 minute per side until crispy.
