Ingredients
- 1 lb large shrimp, peeled and deveined
- 8 oz linguine or angel hair pasta
- 4 cloves garlic, minced
- 4 tbsp unsalted butter
- 2 tbsp extra-virgin olive oil
- 0.5 cup dry white wine (Pinot Grigio or Sauvignon Blanc)
- 1 tbsp fresh lemon juice
- 0.25 tsp red pepper flakes(optional)
- 0.25 cup fresh parsley, chopped
- to taste salt and black pepper
Instructions
- 1
Bring a large pot of salted water to a boil and cook the pasta according to package directions until al dente.
- 2
While pasta cooks, heat olive oil and 2 tablespoons of butter in a large skillet over medium-high heat.
- 3
Add the shrimp to the skillet in a single layer. Season with salt and pepper. Sear for 1-2 minutes per side until just pink, then remove shrimp from the pan and set aside.
- 4
In the same skillet, add the remaining 2 tablespoons of butter. Stir in the minced garlic and red pepper flakes; cook for 1 minute until fragrant.
- 5
Pour in the white wine and lemon juice. Bring to a simmer and let the liquid reduce by half, about 3-5 minutes.
- 6
Return the shrimp to the skillet and toss with the sauce. Add the cooked pasta and fresh parsley.
- 7
Toss everything together to coat thoroughly. Serve immediately with an extra squeeze of lemon if desired.
