Ingredients

  • 200 g Udon noodles (fresh or dried)
  • 250 g Mushrooms (shiitake or cremini), sliced
  • 2 tbsp White miso paste
  • 1 tbsp Soy sauce
  • 1 tbsp Toasted sesame oil
  • 1 tsp Neutral oil (or sesame oil if preferred)
  • 1 clove Garlic, minced(optional)
  • 1 tsp Ginger, grated(optional)
  • 2 stalks Scallions, thinly sliced
  • 3 cups Vegetable broth (or water)
  • 1 tsp Sesame seeds (optional)(optional)

Instructions

  1. 1

Bring a pot of water to a boil and cook udon according to package directions until tender; drain and set aside (about 10 minutes prep/cook overlap, then drain).

  2. 2

In a separate pot, heat neutral oil over medium-high heat. Sauté mushrooms (and garlic/ginger if using) until browned and tender, about 6–8 minutes.

  3. 3

Add broth and soy sauce to the pot and bring to a gentle simmer. Stir in miso paste off the heat (or on low) until fully dissolved, then return to a low simmer for 2–3 minutes.

  4. 4

Add drained udon to the broth and warm through for 1–2 minutes. Turn off heat and stir in toasted sesame oil.

  5. 5

Serve immediately, topped with scallions (and sesame seeds if using).
