- 200 grams dried wheat noodles
- 3 tablespoons tahini or sesame paste
- 2 tablespoons soy sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 cup cucumber, julienned
- 1 teaspoon toasted sesame seeds(optional)

Boil the wheat noodles in a large pot of water for 4-5 minutes until al dente, then drain and immediately rinse under cold running water until completely chilled.

In a small mixing bowl, whisk together the tahini, soy sauce, sesame oil, rice vinegar, and sugar until the dressing is smooth and emulsified.
