Ingredients

  • 200 grams dried wheat noodles
  • 3 tablespoons tahini or sesame paste
  • 2 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 cup cucumber, julienned
  • 1 teaspoon toasted sesame seeds(optional)

    Boil the wheat noodles in a large pot of water for 4-5 minutes until al dente, then drain and immediately rinse under cold running water until completely chilled.

    In a small mixing bowl, whisk together the tahini, soy sauce, sesame oil, rice vinegar, and sugar until the dressing is smooth and emulsified.

    Toss the chilled noodles with the sesame dressing until evenly coated.

    Divide the noodles into two bowls, top with julienned cucumber and toasted sesame seeds, and serve immediately.
