Ingredients

  • 2 large (about 1.5 lbs) bone-in chicken thighs
  • 1/2 cup glutinous rice
  • 8 garlic cloves
  • 1 2-inch piece, sliced fresh ginger
  • 6 dried jujubes
  • 3 green onions
  • 6 cups water or chicken broth
  • 1 tsp salt
  • 1 tbsp fish sauce(optional)
  • 1/2 tsp whole black peppercorns(optional)

Instructions

  1. 1

Rinse the glutinous rice and soak it in water for 15 minutes while you prep the other ingredients (drain before using).

  2. 2

In a large pot, combine chicken thighs, garlic cloves, ginger slices, jujubes, and peppercorns. Pour in 6 cups of water or broth and bring to a boil over high heat.

  3. 3

Skim off any foam, reduce heat to medium-low, cover, and simmer for 40 minutes.

  4. 4

Add the drained rice and fish sauce, then simmer uncovered for another 15 minutes, stirring occasionally so the rice doesn't stick.

  5. 5

Season with salt to taste, slice the green onions, and serve the soup topped with green onions.

  6. 6

Serve hot, optionally with salt and pepper on the side for dipping the chicken.
