Ingredients

  • 2 6 oz each salmon fillets
  • 1/4 cup soy sauce
  • 2 tbsp mirin
  • 2 tbsp sake(optional)
  • 2 tbsp brown sugar
  • 1 tsp grated ginger
  • 2 cloves minced garlic
  • 1 tsp cornstarch
  • 1 tbsp vegetable oil
  • 1.5 cups short-grain white rice
  • 2 sliced green onions(optional)
  • 1 tbsp toasted sesame seeds(optional)

Instructions

  1. 1

Rinse the rice and cook it in a rice cooker or pot with 1.75 cups water, about 15 minutes, keeping it covered and warm.

  2. 2

Whisk soy sauce, mirin, sake, brown sugar, ginger, and garlic in a small bowl. Stir in cornstarch until dissolved.

  3. 3

Pat salmon dry and season lightly. Heat oil in a skillet over medium-high heat and sear salmon skin-side up for 3-4 minutes until golden.

  4. 4

Flip salmon, reduce heat to medium, and pour in the teriyaki sauce. Simmer 4-5 minutes, spooning the glaze over the salmon until it thickens and coats the fish.

  5. 5

Fluff rice and divide between two bowls. Top with glazed salmon, drizzle remaining sauce from the pan, and garnish with green onions and sesame seeds. Serve immediately.
