Ingredients

  • 1 cup uncooked sushi rice (or short-grain white rice)
  • 6 oz salmon fillet
  • 1/2 tsp salt
  • 2 nori sheets
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame seeds(optional)
  • 1 tsp soy sauce(optional)

Instructions

  1. 1

Rinse the rice until the water runs clear, then cook it with 1 1/4 cups water in a rice cooker or pot (about 10 minutes plus resting time).

  2. 2

Meanwhile, season the salmon with salt and pan-sear or bake at 400°F for 8-10 minutes until cooked through, then flake with a fork.

  3. 3

Mix the rice vinegar into the warm rice and let it cool slightly until easy to handle.

  4. 4

Wet your hands with water and a pinch of salt, place a scoop of rice in one palm, add a spoonful of flaked salmon in the center, and top with more rice.

  5. 5

Press and shape gently into a triangle or ball, repeating to make 4 onigiri.

  6. 6

Wrap each onigiri with a strip of nori, sprinkle with sesame seeds, and serve with a dash of soy sauce if desired.
