Ingredients

  • 2 fillets Salmon fillets
  • 1/4 tsp Salt
  • 1/8 tsp Black pepper
  • 1 tbsp Neutral oil (canola or grapeseed)
  • 2 tbsp Unsalted butter
  • 1 tbsp White miso paste
  • 1 tsp Soy sauce
  • 1 tsp Rice vinegar (or lemon juice)
  • 1 tsp Honey (optional)(optional)
  • 1 clove Garlic, finely grated
  • 4 cups Baby spinach or mixed greens

Instructions

  1. 1

Prep (10 minutes): Pat salmon dry and season both sides with salt and black pepper. Mince/grate the garlic. In a small bowl, mix miso paste, soy sauce, rice vinegar, and honey (if using) into a smooth paste.

  2. 2

Cook (12 minutes): Heat oil in a nonstick skillet over medium-high heat. Place salmon in the pan skin-side down (if applicable) and cook 5–6 minutes until browned. Flip and cook 5–6 minutes more until just cooked through.

  3. 3

Finish sauce: Lower heat to low. Add butter to the pan and let it melt. Stir in the miso mixture and garlic, then spoon the miso-butter over the salmon for 30–60 seconds.

  4. 4

Serve with greens: While the salmon finishes, steam greens 2–3 minutes until wilted. Plate greens and top with salmon, spooning any remaining miso-butter sauce over the top.
