- 1 cup Red lentils
- 3 cups Water
- 1 teaspoon Ground turmeric
- 1 tablespoon Coconut oil
- 1 medium Onion
- 3 minced Garlic cloves
- 1 tablespoon grated Fresh ginger
- 1 teaspoon Cumin seeds
- 1 teaspoon Salt
- 0.25 cup Fresh cilantro(optional)

Rinse the red lentils thoroughly under cold water until the water runs clear.

In a large pot, combine the lentils, water, and turmeric. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until the lentils are soft and creamy.

While lentils cook, heat coconut oil in a small skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds.

Add the diced onion to the skillet and sauté until translucent, about 5 minutes.

Stir in the minced garlic and ginger, cooking for another 1-2 minutes until fragrant.

Pour the onion and spice mixture into the cooked lentils. Stir well to combine.
