Ingredients

  • 2 cups Sushi Rice (seasoned with vinegar)
  • 2 sheets Nori (Seaweed sheets)
  • 4 pieces Shrimp Tempura
  • 4 oz Sashimi-grade Tuna (minced)
  • 1 tablespoon Sriracha Sauce
  • 0.5 cup Cucumber (julienned)
  • 0.5 whole Avocado (thinly sliced)
  • 2 tablespoons Spicy Mayo(optional)
  • 1 tablespoon Masago (Capelin roe)(optional)
  • 1 tablespoon Green Onions (chopped)(optional)

Instructions

    Prepare the spicy tuna topping by mixing the minced tuna with Sriracha and a teaspoon of sesame oil in a small bowl.

    Place a half-sheet of nori on a bamboo rolling mat covered with plastic wrap.

    Spread a thin, even layer of sushi rice over the nori, leaving no gaps, then flip the sheet over so the rice is facing down.

    Place two pieces of shrimp tempura and several cucumber strips horizontally across the center of the nori.

    Carefully roll the bamboo mat away from you, tucking the edge to create a tight cylinder.

    Layer the sliced avocado and the spicy tuna mixture over the top of the roll.

    Place the plastic wrap back over the roll and use the bamboo mat to gently press the toppings into the rice.

    Slice the roll into 8 even pieces using a very sharp, wet knife and garnish with spicy mayo, masago, and green onions.
