Ingredients

  • 2 packets instant ramen noodles (2 packets)
  • 1 medium carrot
  • 2 cups fresh spinach leaves
  • 2 stalks scallions (green onions)
  • 2 large egg
  • 4 cups water
  • 1 tablespoon soy sauce(optional)
  • ½ teaspoon sesame oil(optional)

Instructions

  1. 1

Bring 4 cups of water to a boil in a saucepan (≈2 minutes).

  2. 2

Add the ramen noodles and cook for 3 minutes, then stir in the seasoning packet, soy sauce, and sesame oil.

  3. 3

While the noodles cook, thinly slice the carrot into matchsticks and add them to the pot; add the spinach leaves and let them wilt (≈1 minute).

  4. 4

Meanwhile, soft‑boil the eggs: place eggs in boiling water for 6 minutes, then transfer to ice water to stop cooking; peel and halve.

  5. 5

Divide the noodles, broth, carrots, and spinach into two bowls, top each with sliced scallions and a halved soft‑boiled egg. Serve immediately.
