Ingredients

  • 2 cups cooked short-grain white rice, warm
  • 3 oz salted salmon, flaked
  • 2 whole umeboshi (pickled plums), pitted(optional)
  • 2 sheets nori sheets, cut into strips
  • 1 tsp rice vinegar
  • 1/4 tsp salt
  • 1 tsp toasted sesame seeds(optional)

Instructions

  1. 1

Place the warm cooked rice in a large bowl and gently fold in the rice vinegar and salt until evenly seasoned.

  2. 2

Wet your hands with water and rub a pinch of salt between your palms to prevent sticking.

  3. 3

Take about 1/2 cup of rice and flatten it into a small patty in your palm. Place a spoonful of flaked salted salmon or half an umeboshi in the center.

  4. 4

Top with another 1/2 cup of rice and gently press and shape into a triangle or rounded ball, compacting just enough to hold together.

  5. 5

Wrap each onigiri with a strip of nori, sprinkle with toasted sesame seeds if using, and serve immediately or wrap for later.
