Quick Niter Kibbeh Kitfo

Ingredients
- 1 pound lean beef (top round or eye of round), finely minced
- 4 tablespoons Niter Kibbeh (Ethiopian spiced clarified butter), melted
- 2 teaspoons Mitmita (spicy chili powder blend)
- 1/2 teaspoon Korerima (black cardamom) powder
- 1/2 teaspoon Salt
- 1/2 cup Ayib (Ethiopian cottage cheese) or mild feta(optional)
- 1 cup Gomen (collard greens), finely chopped and sautéed(optional)
- 2 pieces Injera (flatbread)
Instructions

Trim all visible fat and connective tissue from the beef to ensure a smooth texture.

Finely mince the beef by hand with a sharp knife until it reaches a ground consistency.

In a small saucepan over low heat, gently melt the store-bought Niter Kibbeh until liquid but not bubbling.

Place the minced beef in a large mixing bowl and sprinkle the Mitmita, Korerima, and salt over the top.

Pour the warm melted Niter Kibbeh over the meat and spices.

Using a wooden spoon, mix thoroughly until the beef is evenly coated and the butter is absorbed.

If you prefer it 'lebleb' (slightly warmed), place the mixture in a pan over very low heat for 1-2 minutes, stirring constantly just until warm.

Serve immediately on a piece of Injera with sides of Ayib and Gomen.
