- 2 servings Ramen or Udon noodles
- 4 cups Vegetable broth
- 3 tablespoons White or Red Miso paste
- 1 teaspoon Fresh ginger, grated
- 1 clove Garlic, minced
- 1 tablespoon Soy sauce
- 2 cups Baby spinach
- 2 stalks Green onions, sliced
- 0.5 cup Firm tofu, cubed(optional)
- 1 teaspoon Sesame oil

Bring the vegetable broth to a gentle boil in a medium pot over medium-high heat.

Add the minced garlic and grated ginger to the broth and simmer for 2 minutes to infuse flavors.

Add the noodles to the boiling broth and cook according to the package instructions (usually 3-5 minutes).

While noodles cook, place the miso paste in a small bowl and whisk in a ladle of the warm broth until smooth and liquid.

Reduce the heat to low; add the tofu and baby spinach, stirring until the spinach is just wilted.
