Quick Egg Fried Rice

Ingredients
- 3 cups Cooked white rice (chilled)
- 3 pieces Large eggs
- 2 tablespoons Vegetable oil
- 2 tablespoons Soy sauce
- 1 teaspoon Sesame oil
- 2 stalks Green onions, sliced
- 0.5 cup Frozen peas and carrots(optional)
- 1 clove Garlic, minced(optional)
Instructions

Beat the eggs in a small bowl with a pinch of salt.

Heat 1 tablespoon of oil in a large wok or non-stick skillet over medium-high heat. Pour in the eggs and scramble until just set. Remove eggs from the pan and set aside.

Add the remaining tablespoon of oil to the same pan. If using, sauté the garlic and frozen vegetables for 2 minutes.

Add the chilled rice to the pan, breaking up any large clumps with a spatula. Fry for 3-4 minutes until the rice is heated through and slightly toasted.

Drizzle the soy sauce and sesame oil over the rice. Stir well to coat evenly.

Fold the scrambled eggs and green onions back into the rice. Toss for another minute.

Serve hot immediately.
