Ingredients

  • 1.5 cups Cauliflower rice
  • 1 Egg
  • 0.5 cup Shredded mozzarella cheese
  • 3 slices Prosciutto slices
  • 1 Fresh peach, sliced
  • 0.25 cup Goat cheese, crumbled
  • 2 tbsp Olive oil
  • 1 tsp Fresh rosemary, finely chopped
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper

Instructions

  1. 1

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

  2. 2

In a bowl, combine cauliflower rice, egg, mozzarella, salt, and pepper; mix until a dough forms.

  3. 3

Spread the cauliflower mixture onto the prepared sheet, shaping it into a 10‑inch circle about ¼‑inch thick.

  4. 4

Bake the crust for 10 minutes, until lightly golden.

  5. 5

Meanwhile, in a skillet over medium heat, add 1 tbsp olive oil and caramelize the peach slices for 3‑4 minutes, stirring occasionally.

  6. 6

Remove the crust from the oven, top with prosciutto slices, caramelized peach, and crumbled goat cheese.

  7. 7

Drizzle the remaining olive oil mixed with chopped rosemary over the pizza.

  8. 8

Return to the oven and bake for an additional 4 minutes, until the cheese softens.

  9. 9

    Slice and serve hot.
