Ingredients

  • 300 g boneless pork shoulder or pork loin
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp mirin(optional)
  • 1 tbsp brown sugar
  • 1 tsp rice vinegar(optional)
  • 1 tbsp neutral oil
  • 2 cups cabbage, finely shredded
  • 1 tsp sesame oil(optional)

Instructions

  1. 1

Prep (10 minutes): Slice pork thinly. Grate ginger, mince garlic, and shred cabbage.

  2. 2

Cook (15 minutes): In a bowl, mix soy sauce, mirin (if using), brown sugar, and rice vinegar (if using). Toss pork with the sauce mixture and let sit while you heat the pan.

  3. 3

Heat a large skillet over medium-high heat with the neutral oil. Add pork in a single layer and cook 6–8 minutes, stirring occasionally, until browned and caramelized.

  4. 4

Add ginger and garlic to the pan and cook 2 minutes, stirring, until fragrant and glossy.

  5. 5

Quickly toss shredded cabbage with sesame oil (if using) and a splash of any remaining pan sauce, then serve the pork over/alongside the cabbage.
