- 20 oz Cheese Tortellini
- 0.5 cup Basil Pesto
- 1 cup Roasted Red Peppers
- 0.25 cup Parmesan Cheese
- 2 tbsp Pine Nuts(optional)
- 2 cups Fresh Spinach(optional)
- 1 tsp Salt

Bring a large pot of salted water to a boil.

Add the tortellini and cook according to package instructions, usually 3-5 minutes or until they float.

While pasta cooks, slice the roasted red peppers into thin strips.

Reserve 1/4 cup of the pasta cooking water, then drain the tortellini.

Return the pasta to the pot and add the basil pesto, roasted peppers, and fresh spinach if using.

Toss gently over low heat, adding the reserved pasta water a tablespoon at a time until the sauce reaches your desired consistency.
