Ingredients
- 1 cup All-purpose flour
- 3/4 cup Dashi stock (chilled)
- 4 cups Green cabbage (finely shredded)
- 2 large Eggs
- 1/4 teaspoon Baking powder
- 2 tablespoons Tenkasu (tempura scraps)(optional)
- 4 slices Thinly sliced pork belly
- 4 tablespoons Okonomiyaki sauce
- 2 tablespoons Japanese mayonnaise (Kewpie)
- 1 handful Katsuobushi (bonito flakes)
- 1 teaspoon Aonori (dried seaweed powder)
Instructions
- 1
In a large bowl, whisk together the flour and baking powder, then slowly incorporate the chilled dashi stock until a smooth batter forms.
- 2
Add the shredded cabbage, eggs, and tenkasu to the batter bowl, mixing gently until the cabbage is evenly coated.
- 3
Heat a lightly oiled griddle or non-stick skillet over medium heat.
- 4
Pour half of the batter onto the skillet, shaping it into a round pancake about 1 inch thick.
- 5
Lay two slices of pork belly across the top of the pancake and cook for 5 minutes until the bottom is golden brown.
- 6
Carefully flip the pancake over so the pork side is down, cover with a lid, and cook for another 5-6 minutes.
- 7
Flip the pancake one last time (pork side up) and cook for 2 minutes uncovered to ensure crispness.
- 8
Transfer to a plate and brush generously with okonomiyaki sauce, drizzle with mayonnaise, and sprinkle with aonori and bonito flakes.
