Ingredients

  • 2 packs instant ramen noodles
  • 2 cups oat milk
  • 3 tbsp white miso paste
  • 1 cup vegetable broth
  • 4 cloves garlic
  • 2 tbsp neutral oil
  • 1 tbsp soy sauce
  • 2 stalks green onions
  • 1 tsp toasted sesame oil(optional)
  • 2 soft-boiled eggs(optional)

Instructions

  1. 1

Mince the garlic and slice the green onions. In a small saucepan, heat the neutral oil over medium-low heat and cook the garlic for 3-4 minutes until golden and fragrant to make garlic oil. Set aside.

  2. 2

In a medium pot, combine the vegetable broth and oat milk and warm over medium heat for about 5 minutes, stirring occasionally. Do not boil.

  3. 3

Whisk the miso paste and soy sauce into the warm broth until fully dissolved, then simmer gently for 3 more minutes.

  4. 4

Meanwhile, cook the ramen noodles according to package directions (about 3-4 minutes), discarding the seasoning packets. Drain well.

  5. 5

Divide the noodles between two bowls, ladle the creamy broth over the top, and drizzle with the garlic oil and sesame oil.

  6. 6

Top with sliced green onions and a halved soft-boiled egg if using. Serve immediately.
