Ingredients

  • 1.5 cups sushi rice (or short-grain rice), cooked
  • 4 sheets nori sheets
  • 0.75 cup black beans, rinsed and drained
  • 0.5 cup corn kernels
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha
  • 1 avocado, sliced(optional)
  • 1 cup shredded lettuce(optional)
  • 1 tbsp lime juice(optional)
  • 0.25 tsp salt

Instructions

  1. 1

In a small bowl, mix the mayonnaise and sriracha to make the spicy mayo; set aside.

  2. 2

Warm the black beans and corn in a microwave or skillet for 2-3 minutes, then season with salt and lime juice.

  3. 3

Lay the nori sheets shiny-side down and spread an even layer of cooked rice over each, leaving a 1-inch border at the top edge.

  4. 4

Layer beans, corn, avocado, and shredded lettuce across the lower third of each rice-covered sheet, then drizzle with spicy mayo.

  5. 5

Roll each sheet tightly from the bottom, sealing the edge with a dab of water, then slice each roll in half and serve.
