Ingredients

  • 8 oz Thinly sliced beef (sirloin or ribeye)
  • 3 medium Yukon gold potatoes, cut into chunks
  • 1 Yellow onion, sliced
  • 1 1/2 cups Dashi stock
  • 3 tbsp Soy sauce
  • 2 tbsp Mirin
  • 2 tbsp Sake(optional)
  • 1 tbsp Sugar
  • 1/2 cup Frozen edamame(optional)
  • 2 Green onions, sliced(optional)

Instructions

  1. 1

Prep: Slice the onion, cut potatoes into bite-sized chunks, and slice green onions (10 minutes).

  2. 2

Heat a skillet over medium heat, add a little oil, and sear the beef slices for 1-2 minutes until browned. Remove and set aside.

  3. 3

Add onion to the skillet and cook 3 minutes until softened. Add potatoes, dashi, soy sauce, mirin, sake, and sugar. Bring to a simmer, cover, and cook 12-15 minutes until potatoes are tender.

  4. 4

Return the beef to the pan and add edamame; simmer uncovered 5 minutes to meld flavors and reduce the broth slightly.

  5. 5

Ladle into bowls, spooning broth over top, and garnish with sliced green onions.
