  • 180 g spaghetti (or ramen noodles)
  • 2 packs (about 100) natto
  • 2 tbsp soy sauce
  • 3 stalks scallions
  • 1 tsp mustard (Japanese karashi or Dijon)(optional)
  • 1 tsp neutral oil (optional, for gloss)(optional)

Instructions

    Boil a pot of salted water. Cook the spaghetti until tender, then reserve about 1/4 cup (60 ml) of the pasta water and drain. (Total cook time: ~12 minutes.)

    While the pasta cooks, mix natto with soy sauce and (if using) mustard in a bowl. Stir until glossy and well combined. (Prep time: ~10 minutes total including this step.)

    Slice the scallions thinly. Add most of the scallions to the natto mixture and toss to combine.

    Add hot drained pasta to the natto bowl. Toss vigorously, adding a splash of reserved pasta water as needed until the pasta is glossy and sticky. Top with remaining scallions and serve immediately.
