Ingredients
- 180 g spaghetti (or ramen noodles)
- 2 packs (about 100) natto
- 2 tbsp soy sauce
- 3 stalks scallions
- 1 tsp mustard (Japanese karashi or Dijon)(optional)
- 1 tsp neutral oil (optional, for gloss)(optional)
Instructions
- 1
Boil a pot of salted water. Cook the spaghetti until tender, then reserve about 1/4 cup (60 ml) of the pasta water and drain. (Total cook time: ~12 minutes.)
- 2
While the pasta cooks, mix natto with soy sauce and (if using) mustard in a bowl. Stir until glossy and well combined. (Prep time: ~10 minutes total including this step.)
- 3
Slice the scallions thinly. Add most of the scallions to the natto mixture and toss to combine.
- 4
Add hot drained pasta to the natto bowl. Toss vigorously, adding a splash of reserved pasta water as needed until the pasta is glossy and sticky. Top with remaining scallions and serve immediately.
