Ingredients
- 1/2 cup All-purpose flour
- 1 Egg
- 3/4 cup Milk
- 1 tablespoon Butter, melted
- 1 cup Mushrooms, sliced
- 2 cloves Garlic, minced
- 1/4 cup Gruyère cheese, grated
- 1 teaspoon Olive oil
- 1/4 teaspoon Salt
- 1/8 teaspoon Black pepper
Instructions
- 1
In a bowl, whisk together flour, egg, milk, melted butter, and a pinch of salt until smooth; let the batter rest for 5 minutes.
- 2
While the batter rests, heat olive oil in a skillet over medium heat, add garlic and sauté for 30 seconds, then add sliced mushrooms, season with salt and pepper, and cook until softened, about 5 minutes; stir in grated Gruyère and remove from heat.
- 3
Heat a non‑stick pan over medium‑high heat, lightly grease with butter, pour 1/4 cup of batter, swirl to coat the pan, and cook 1‑2 minutes until the edges lift; flip and cook another 30 seconds, then transfer to a plate.
- 4
Place a spoonful of the mushroom‑cheese mixture onto one half of the crêpe, fold over, and briefly return to the pan to brown the outside, about 1 minute per side. Repeat with the remaining batter and filling.
- 5
Serve the crêpes warm, optionally garnished with a sprinkle of extra cheese or fresh herbs.
