Ingredients

  • 2 cups dashi (or water)
  • 1 tbsp wakame (dried)
  • 200 g soft tofu
  • 2 tbsp white miso paste
  • 2 tbsp green onions
  • 1 tsp soy sauce (optional, for extra savoriness)(optional)

Instructions

  1. 1

If using dried wakame, rehydrate it in a small bowl with water for 5 minutes, then drain and set aside.

  2. 2

In a small pot, bring the dashi (or water) to a gentle simmer over medium heat. Add the rehydrated wakame and simmer for 3 minutes.

  3. 3

Turn the heat to low. Add the tofu gently and warm it for 3–4 minutes, being careful not to boil.

  4. 4

In a small bowl, whisk the miso paste with a few tablespoons of the hot soup until smooth. Stir the miso mixture into the pot and heat just until steaming (do not boil), about 2 minutes.

  5. 5

Ladle into bowls and top with sliced green onions. Serve immediately.
