Ingredients
- 2 fillets cod fillets
- 1 tbsp white miso paste
- 1 tbsp soy sauce (or tamari)
- 1 tsp honey (or brown sugar)
- 1 tsp rice vinegar (or apple cider vinegar)
- 1 tsp sesame oil
- 1 clove garlic(optional)
- 1 tsp fresh ginger(optional)
- 4 cups baby spinach
- 1 tbsp neutral oil (or olive oil)
- 1 tbsp water(optional)
- 1 tsp sesame seeds(optional)
- 1 tsp lime or lemon juice(optional)
Instructions
- 1
Prep (10 minutes): Heat broiler to high. Pat cod dry and place on a foil-lined sheet. In a small bowl, whisk miso, soy sauce, honey, vinegar, sesame oil, and (if using) grated garlic and ginger until smooth.
- 2
Broil the cod (15 minutes total cook time): Brush or spoon the miso glaze over the cod. Broil 6–8 minutes, then glaze again and broil 4–7 minutes more, until the cod flakes easily and reaches 145°F/63°C.
- 3
Sauté the greens during the last part of cook time: In a skillet over medium-high heat, add oil. Add spinach and a splash of water (if needed) and sauté 2–4 minutes until wilted. Season with a squeeze of citrus (if using).
- 4
Serve: Plate the sautéed greens and top with the broiled cod. Sprinkle sesame seeds over the fish (and/or greens) and spoon any remaining glaze from the pan over the cod.
