Ingredients

  • 8 oz ground beef (85% lean)
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 6 small flour tortillas
  • 2 cups shredded cabbage
  • 2 tbsp mayonnaise
  • 1 tbsp rice vinegar
  • 1 cup cherry tomatoes, quartered
  • 2 green onions, sliced
  • 2 cloves garlic, minced

Instructions

  1. 1

In a bowl, toss the cabbage with mayonnaise, rice vinegar, and a pinch of salt to make the slaw; set aside.

  2. 2

Mix the quick salsa by combining the quartered cherry tomatoes with half the green onions and a pinch of salt.

  3. 3

Heat sesame oil in a skillet over medium-high heat. Add garlic and cook 30 seconds, then add ground beef and cook 5-6 minutes, breaking it up, until browned.

  4. 4

Whisk miso, soy sauce, and honey with 2 tbsp water, add to the skillet, and simmer 2-3 minutes until the beef is glazed.

  5. 5

Warm the tortillas in a dry pan or microwave for 30 seconds.

  6. 6

Fill tortillas with miso beef, top with slaw and salsa, sprinkle with remaining green onions, and serve.
