Mediterranean Quinoa Salad

Ingredients

  • 1 cup Quinoa
  • 2 cups Water
  • 1 large Cucumber
  • 1 cup Cherry tomatoes
  • 0.25 cup Red onion
  • 0.5 cup Feta cheese
  • 0.25 cup Kalamata olives(optional)
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • to taste Salt and pepper

    Rinse the quinoa under cold water using a fine-mesh strainer.

    In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

    Remove from heat and let the quinoa sit covered for 5 minutes, then fluff with a fork and let cool to room temperature.

    While quinoa cools, dice the cucumber, halve the cherry tomatoes, and finely mince the red onion.

    In a large mixing bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.

    Add the cooled quinoa, cucumber, tomatoes, onion, olives, and crumbled feta to the bowl.

    Toss gently to combine all ingredients with the dressing.

    Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
