- 4 lbs Whole chicken, patted dry
- 0.25 cup Extra virgin olive oil
- 2 pieces Lemons, halved and sliced
- 6 cloves Garlic cloves, minced
- 2 tablespoons Fresh rosemary, chopped
- 1 tablespoon Dried oregano
- 2 teaspoons Kosher salt
- 1 teaspoon Black pepper
- 0.5 teaspoon Smoked paprika
- 1 large Yellow onion, wedged
- 2 tablespoons Fresh parsley for garnish(optional)

Preheat your oven to 425°F (220°C) and lightly grease a large roasting pan.

In a small bowl, whisk together the olive oil, minced garlic, rosemary, oregano, salt, pepper, and paprika to create a rub.

Place the onion wedges and half of the lemon slices in the bottom of the roasting pan to create a bed for the chicken.

Stuff the chicken cavity with the remaining lemon halves and a sprig of rosemary if desired.
