- 4 lbs Whole chicken, patted dry
- 0.25 cup Extra virgin olive oil
- 2 pieces Lemons, halved and sliced
- 6 cloves Garlic cloves, minced
- 2 tablespoons Fresh rosemary, chopped
- 1 tablespoon Dried oregano
- 2 teaspoons Kosher salt
- 1 teaspoon Black pepper
- 0.5 teaspoon Smoked paprika
- 1 large Yellow onion, wedged
- 2 tablespoons Fresh parsley for garnish(optional)

Preheat your oven to 425°F (220°C) and lightly grease a large roasting pan.

In a small bowl, whisk together the olive oil, minced garlic, rosemary, oregano, salt, pepper, and paprika to create a rub.

Place the onion wedges and half of the lemon slices in the bottom of the roasting pan to create a bed for the chicken.

Stuff the chicken cavity with the remaining lemon halves and a sprig of rosemary if desired.

Generously coat the entire chicken with the herb oil mixture, ensuring you rub some under the skin of the breast for maximum flavor.

Place the chicken breast-side up on the bed of onions and lemons, then tie the legs together with kitchen twine.
