  • 2 cups Broccoli florets

  • 4 cups Fresh Spinach or Kale
  • 0.25 cup Tahini
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Maple Syrup(optional)
  • 1 whole Avocado, sliced(optional)

Instructions

    Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

    Cook your preferred grain (quinoa or rice) according to package instructions and set aside to cool slightly.

    Toss the cubed sweet potatoes, broccoli, and chickpeas with olive oil, smoked paprika, salt, and pepper on the baking sheet.
