Ingredients

  • 8 oz pork breakfast sausage
  • 2 cups frozen shredded hash browns
  • 6 eggs
  • 3/4 cup milk
  • 3/4 cup cheddar cheese
  • 1/2 bell pepper
  • 2 green onion
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

  1. 1

Brown the sausage in a skillet over medium heat, breaking it into crumbles, about 6-8 minutes. Drain excess fat.

  2. 2

Preheat oven to 375°F (190°C) and grease an 8x8 baking dish.

  3. 3

Press hash browns into the bottom of the dish and top with cooked sausage, diced bell pepper, and half the cheese.

  4. 4

Whisk eggs with milk, salt, pepper, and garlic powder. Pour evenly over the casserole.

  5. 5

Top with remaining cheese. Bake 40-45 minutes until eggs are set and top is golden.

  6. 6

Rest 5 minutes, garnish with sliced green onion, and serve. Assemble the night before and bake fresh in the morning.
