Ingredients

  • 3 cups Vegetable broth (or water + bouillon)
  • 3 tbsp White miso paste
  • 6 oz Rice noodles (thin)
  • 8 oz Mushrooms (shiitake or cremini), sliced
  • 2 cups Baby spinach
  • 1 tbsp Soy sauce(optional)
  • 1 tsp Sesame oil(optional)
  • 2 Green onions, sliced(optional)

Instructions

  1. 1

Bring the broth to a gentle simmer in a pot. Add the sliced mushrooms and cook until tender, about 6 minutes.

  2. 2

Add the rice noodles and cook until just tender, about 4 minutes. (If your noodles need soaking, follow the package directions, then add to the simmer.)

  3. 3

Turn off the heat. Whisk the miso paste with a ladle of hot broth, then stir it back into the pot. Add the spinach and stir until wilted, about 2 minutes.

  4. 4

Taste and adjust with soy sauce if desired. Serve hot, topped with green onions and a drizzle of sesame oil if using.
