Lentil Shepherd's Pie

Ingredients

  • 1 cup Brown lentils
  • 1.5 lbs Potatoes
  • 1 medium Onion
  • 2 medium Carrots
  • 2 cups Vegetable broth
  • 2 tbsp Tomato paste
  • 1 tsp Dried thyme
  • 0.25 cup Milk
  • 2 tbsp Butter
  • 0.5 cup Frozen peas(optional)

Instructions

    Peel and boil potatoes until soft. Mash with milk and butter until smooth.

    In a large skillet, sauté diced onions and carrots until softened.

    Add lentils, vegetable broth, tomato paste, and thyme. Simmer for 20-25 minutes until lentils are tender and liquid is reduced.

    Stir in frozen peas and season with salt and pepper.

    Transfer the lentil mixture to a baking dish and spread the mashed potatoes evenly over the top.

    Bake at 400°F (200°C) for 15-20 minutes or until the potato peaks are golden brown.
