Ingredients
- 600 ml Heavy cream
- 200 g Granulated sugar
- 75 ml Lemon juice
- 2 tablespoons Lemon zest
- 1 handful Fresh berries(optional)

Place the heavy cream and sugar in a large saucepan over medium heat.

Bring the mixture to a boil, stirring constantly to ensure the sugar dissolves.

Once boiling, let it bubble for exactly 3 minutes, watching carefully so it does not boil over.

Remove from heat and stir in the lemon juice and lemon zest.

Let the mixture sit for 5 minutes to cool slightly.

Strain through a fine-mesh sieve into a jug to remove the zest for a smoother texture.

Pour the liquid into small ramekins or glasses.

Refrigerate for at least 4 hours, or until completely set.
