  • 2 tablespoons Fresh lemon zest
  • 2 cups All-purpose flour
  • 0.25 teaspoon Salt
  • 1 teaspoon Lemon juice(optional)

    Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.

    In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Stir in the lemon zest and lemon juice.

    Gradually add the flour and salt, mixing until a cohesive dough forms. Do not overmix.

    Roll the dough into a log and wrap in plastic wrap. Refrigerate for 30 minutes to firm up.

    Slice the log into 1/2-inch thick rounds and place them on the prepared baking sheet.
