Ingredients
- 2 packs instant ramen noodles (discard seasoning packets)
- 2 tbsp gochujang
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp soy sauce
- 1 tsp honey(optional)
- 1 medium cucumber
- 1 tbsp sesame seeds
- 2 tbsp green onion(optional)
Instructions
- 1
Bring a pot of water to a boil. Cook the ramen noodles according to package directions (about 3–4 minutes), then drain.
- 2
Rinse the noodles under cold water until fully chilled, then drain well (this keeps the noodles from getting sticky).
- 3
In a large bowl, whisk gochujang, rice vinegar, sesame oil, soy sauce, and honey (if using) into a smooth sauce.
- 4
Toss the chilled noodles with the sauce until evenly coated. Add cucumber (cut into thin matchsticks or small pieces) and toss again.
- 5
Serve immediately, topped with sesame seeds and green onion (if using).
