Ingredients

  • 6 Eggs
  • 1 bag Spinach
  • 1 lb Lean ground beef
  • 0.5 medium Onion
  • 2 cloves Garlic
  • 1 tbsp Gochujang (soy-free)
  • 1 tbsp Rice vinegar
  • 1.5 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. 1

Wilt spinach: sauté spinach in a dry skillet or with 1 tsp oil until reduced. Cool, then squeeze out excess moisture.

  2. 2

In a bowl, whisk eggs with salt and pepper. Stir in squeezed spinach.

  3. 3

Cook beef filling: heat 1 tbsp olive oil in a skillet. Add diced onion and cook 4–5 minutes. Add garlic 30 seconds, then add beef and brown 7–8 minutes.

  4. 4

Stir in gochujang and rice vinegar; cook 2 minutes until thick.

  5. 5

Lower heat to medium-low. Pour egg-spinach mixture into the skillet (or use a clean oven-safe skillet). Cook gently, stirring edges until set but still slightly soft, 8–10 minutes.

  6. 6

Spoon beef filling across the surface, then finish cooking 3–5 minutes until fully set.

  7. 7

Rest 5 minutes, then slice into wedges and serve.
