Ingredients

  • 8 large Eggs
  • 6 oz Spinach
  • 2 tbsp Gochujang
  • 1 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 2 cloves Garlic
  • 1 tsp Brown sugar substitute (or omit)(optional)
  • 2 tbsp Neutral oil
  • 0.25 tsp Salt(optional)
  • 0.25 tsp Black pepper

Instructions

  1. 1

Chop spinach and squeeze dry. Whisk eggs with salt (optional) and black pepper.

  2. 2

Cook spinach in a skillet until wilted; cool slightly, then fold into eggs.

  3. 3

Heat a nonstick skillet over medium. Add 1 tbsp oil.

  4. 4

Pour in egg-spinach mixture and cook like a thick omelet, 6–8 minutes, until set but still pliable.

  5. 5

While it cooks, mix gochujang, soy sauce, rice vinegar, minced garlic, and (optional) sugar substitute into a glaze.

  6. 6

Transfer cooked omelet to a board and cut into 16 small rectangles (or bite pieces).

  7. 7

Skewer pieces (soak wooden skewers if using). Brush with glaze.

  8. 8

Pan-sear skewers briefly (30–60 seconds per side) to caramelize glaze, then serve hot.
