Ingredients

  • 2 medium Persian or English cucumbers
  • 1 tbsp Gochugaru (Korean chili flakes)
  • 2 cloves, minced Garlic
  • 1 tbsp Rice vinegar
  • 1 tsp Soy sauce
  • 1 tsp Sesame oil
  • 1/2 tsp Sugar
  • 1/2 tsp Salt
  • 1 tsp Toasted sesame seeds(optional)

Instructions

  1. 1

Thinly slice the cucumbers about 1/8 inch thick (bias-cut coins or half-moons work well).

  2. 2

Toss cucumber slices with salt in a bowl and let sit 5 minutes to draw out excess moisture, then drain off the liquid.

In a small bowl, whisk together gochugaru, garlic, rice vinegar, soy sauce, sugar, and sesame oil.

  4. 4

Add the drained cucumbers to the dressing and toss until evenly coated.

Top with sesame seeds and green onion, and serve immediately or chilled for up to a day.
