Ingredients

  • 300 g beef ribeye or sirloin, thinly sliced
  • 3 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp pear or apple, grated(optional)
  • 4 small flour or corn tortillas
  • 1/2 cup kimchi, chopped
  • 1 cup shredded cabbage or coleslaw mix
  • 2 tbsp mayonnaise
  • 2 green onions, sliced(optional)
  • 1 tsp toasted sesame seeds(optional)

Instructions

  1. 1

Whisk soy sauce, brown sugar, sesame oil, garlic, ginger, and grated pear in a bowl. Add sliced beef, toss to coat, and marinate 10 minutes.

  2. 2

Meanwhile, mix chopped kimchi, shredded cabbage, and mayonnaise in a bowl to make the kimchi slaw; set aside.

  3. 3

Heat a skillet over medium-high heat. Cook the beef (with marinade) in a single layer for 4-5 minutes, stirring occasionally, until browned and caramelized.

  4. 4

Warm tortillas in a dry pan or microwave for about 1 minute.

  5. 5

Assemble tacos: divide beef among tortillas, top with kimchi slaw, and drizzle with any remaining pan juices.

  6. 6

Garnish with green onions and sesame seeds and serve immediately.
