Ingredients

  • 250 g ground pork
  • 2 cloves garlic
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp gochujang
  • 2 tbsp ssamjang (or extra gochujang + 1 tsp soybean paste)(optional)
  • 1 tsp rice vinegar(optional)
  • 8 leaves romaine or butter lettuce leaves
  • 2 tbsp green onion(optional)
  • 1 tsp toasted sesame seeds(optional)

Instructions

  1. 1

Prep (15 minutes): Mince the garlic. Chop green onion if using. Separate lettuce leaves and rinse/dry well.

  2. 2

Cook (15 minutes): Heat a skillet over medium-high heat. Add sesame oil, then add ground pork. Cook 6–8 minutes, breaking it up, until browned.

  3. 3

Add garlic and cook 30–60 seconds until fragrant. Stir in soy sauce, brown sugar, and gochujang. Simmer 3–5 minutes until glossy and slightly thickened.

  4. 4

Make sauce (quick mix): In a small bowl, stir ssamjang with rice vinegar (and a splash of water if needed) until spreadable.

  5. 5

Serve: Spoon warm pork into lettuce leaves. Add a small dollop of ssamjang-style sauce and top with green onion and sesame seeds if desired.
