Ingredients
- 2 cups Cooked day-old rice
- 3/4 cup Kimchi (chopped)
- 2 Eggs
- 1 tbsp Neutral oil (or sesame oil for cooking)
- 1 tsp Sesame oil
- 2 tbsp Scallions (thinly sliced)
- 1 tbsp Soy sauce (optional, to taste)(optional)
- 1 tbsp Kimchi juice (from the jar, optional)(optional)
Instructions
- 1
Prep (10 minutes): Chop the kimchi and slice the scallions. If the rice is clumped, break it up with your fingers.
- 2
Heat a large skillet or wok over medium-high heat and add the neutral oil. Add kimchi (and kimchi juice if using) and sauté for about 2 minutes until fragrant.
- 3
Add the day-old rice and stir-fry for about 6 minutes, spreading it out to help it heat through and lightly toast.
- 4
Push the rice to one side. Crack in the eggs and scramble them in the empty space, then mix through the rice.
- 5
Turn off the heat and drizzle in sesame oil. Stir in scallions and serve immediately.
