Ingredients

  • 10 oz Ground beef (80/20)
  • 1/2 cup Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Gochujang
  • 1 tbsp Soy sauce
  • 1/2 cup Black beans, drained and rinsed
  • 1/2 cup Beef broth (or water)
  • 1 tsp Cornstarch(optional)
  • 1 tbsp Water (for cornstarch slurry)(optional)
  • 4 count Tortillas (small/medium)
  • 1/2 cup Cucumber, diced
  • 2 tbsp Scallions, thinly sliced
  • 1 tsp Neutral oil

Instructions

  1. 1

Prep (15 minutes): Dice the onion and cucumber, mince the garlic, and slice the scallions. Drain and rinse the black beans.

  2. 2

Cook (20 minutes): Heat oil in a skillet over medium-high heat. Add ground beef and cook until browned, 6–8 minutes; break it up as it cooks.

  3. 3

Add onion and cook until softened, 3–4 minutes. Stir in garlic for 30 seconds, then add gochujang and soy sauce and cook 1 minute.

  4. 4

Add black beans and broth. Simmer until the mixture thickens slightly, 8–10 minutes. If you want a thicker, jjajjang-like sauce, stir cornstarch with water and simmer 1–2 minutes more.

  5. 5

Assemble: Warm tortillas, spoon in the beef filling, and top with cucumber and scallions.
